Umbrian Cuisine
So much has been written about Umbrian cuisine that I feel no compulsion to add much to that here. Very tasty, natural and yet simple the cuisine has two important secrets. Firstly the best of primary ingredients are invariably used. Locally sourced (Often from the restaurant/agriturismo's own vegetable garden or "orto") you can be sure that they will be both fresh and tasty. Primary ingredients of this quality are getting increasingly hard to find in countries like England and America.
The second factor is hard-warn experience born of a tradition passed down from mother to daughter. Years and years of making the same dishes has evolved a serious of little "tricks" that the cook is probably hardly aware of anymore. Many seemingly insignificant little habits go together to make that simple dish taste out of this world.
At Cycle middle Italy we have tried to insure that all our stop-off points, hotels and agriturismos provide the highest quality of local cuisine. For the hotter months these places will also include pools to take a refreshing dip and for the family holidays, a children's play area.
